This is a procedure, and will make enough of a very elegant dish to serve however many you need to serve. Maybe add a side salad -- light, with a simple balsamic-style dressing.

Step 1
Cook as much rice as you need to feed the people you want to feed, or perhaps a little more just in case.
Step 2
While the rice is cooking, chop the tomatoes and slice the green onions. In both cases, the amount is up to you -- they add color and texture as well as flavor.
Step 3
Toast the almonds: that is, melt a little butter in a skillet, add the slivered almonds, and stir them around over medium-ish heat until they start to turn golden. It will seem like they're not going to do that, and you'll be tempted to go do something else for just a second -- don't do that, because that's the instant when they will go from beautiful gold-toasted almonds to brown with some black, which is edible but not *nearly* as nice. I recommend making more of the almonds than you think you'll need -- they're really good.
Step 4
Sautee the shrimp in a fairly wide/deep skillet -- enough that you can stir them around pretty freely and not worry about knocking them out of the pan. When the are *almost* but *not quite* done -- just starting to be pink, but still a tiny bit translucent -- pour some brandy over them -- not enough that they're swimming in it, but definitely enough to coat the shrimp and the pan. Using a long kitchen match, light the brandy and swirl it around until it goes out.
Step 5
Put the shrimp in a fairly large serving bowl (a clear bowl will be really pretty) and add enough rice to absorb any remaining brandy. Then add cream and white wine -- start with maybe a quarter to a half a cup of each. Add rice until that liquid is absorbed. Repeat this process until you have enough to feed however many people you plan to feed.
Step 6
Stir the chopped green onions and chopped tomatoes into the shrimp and rice mixture.
Step 7
Set aside enough of the toasted almonds to use as a garnish, and mix however much of the rest you care to in with the shrimp and rice and vegetables.
Step 8
Garnish with the remaining toasted almonds. If there are still almonds left, people can add them to their own bowls to taste, or you can use them later. Seriously, toasted almonds are not going to go to waste.
