Step 1
Pour the oil into a wide, heavy, lidded pan or wok, and set over medium-high heat.
When hot, add the cinnamon. Stir once, then quickly add the onions and chiles. Stir and fry for 5-7 minutes or until the onions are a golden brown.
Remove pan from heat and add yogurt and 1/2 tsp salt. Return the pan to the heat and cook, stirring, until all the yogurt is absorbed and you can see the oil at the edges.
Add the mushrooms, another 3/4 to 1 tsp salt, cloves, cardamom, and cilantro. Stir, reduce heat to low, cover, and cook gently for 10-15 minutes, stirring occasionally.
Remove the lid, raise heat to medium-high, and boil off some of the liquid, stirring frequently. Add cream, if desired, stir and serve.
