Stir Fried Vegetable Lo Mein

The key to making stir fry stress free is prepping all the veggies before you even consider lighting a burner. The cooking happens fast (which is kind of the point right?) Having everything at the ready ensures the perfect cook on each element. This is the perfect place to add a protein of your choice. Just about anything goes, just precook it and add it back in at the end to heat through.

Instructions

Step 1
Start by cleaning, slicing and chopping veggies into bite-sized pieces. Keep them separated so they can be added to the pan at just the right time.
Step 2
Bring a pot of salted water to a boil for the chow mein noodles. They take 3-5 minutes to cook so cook them just before serving.
Step 3
Heat 2 tbls of oil in a large saute pan or wok.
Step 4
Quickly stir fry shrimp or chicken if using. Shrimp are cooked through when they turn a lovely pink colour. Remove to a plate and set aside.
Step 5
Add 1 tbls of oil to the pan and start the vegetables (longest cooking - shortest with a couple of minutes between additions. In order: Carrot, celery, onion, bok choy - white bits, mushroom, peppers, bok choy - green bits, then add back the shrimp or chicken if using.
Step 6
Add sauce, stir to coat and heat through until thickened. If the sauce is too thick add a little bit of water to thin it
Step 7
Place 1 portion of noodles on each plate and serve stir fried vegetables on the side. Any leftover noodles can be used for Buddha Bowls on Saturday.
Step 8
Garnish with green onion and sesame seeds if desired.
