50 gmgreen garlic

2 pinchgaram masala

1 pinchturmeric powder

Prepare White Base
Step 1
In a bowl, place three raw egg whites and make sure not to include yolk. Proceed by shredding two cheese cubes into the bowl. If using unsalted cheese, add a pinch of salt. Additionally, add a pinch of black pepper powder. Whisk the ingredients together in the bowl until well combined.



Step 2

To begin, ignite the gas burner and set it to a medium flame. Add 2 tablespoons of oil to a pan and heat it up.
Once the oil is heated, pour the prepared egg and cheese mixture into the pan. On medium flame, continuously stir the mixture until it begins to scramble. It is not necessary to fully scramble the eggs; achieving a 60-70% scramble is sufficient. Once done, transfer the scrambled mixture into a bowl.


Prepare Green Chutney

Before proceeding, ensure that the pan is clean and dry. Add three tablespoons of oil and one cube of butter to the pan, allowing them to heat up. Begin by adding the finely chopped green garlic into it, gently stirring it to ensure even distribution. Subsequently, introduce the garlic paste, ginger paste, and chilli paste into the pan, continuing to stir the amalgamation for a few seconds.





Step 4
Reduce the gas flame to a low setting and add the dry spices—turmeric powder, coriander cumin powder, black pepper powder, garam masala, and salt—into the pan. Additionally, add chopped coriander. Adjust the flame to a medium level and stir the mixture thoroughly, ensuring that the spices do not adhere to the bottom of the pan. Continue stirring until the rawness of the spices dissipates.





Step 5

Increase the gas flame to high and carefully add water to prevent the spices from scorching. Allow the mixture to cook for approximately 1-2 minutes until it reaches a desirable consistency, with the chutney emitting an aromatic fragrance and the oil separating from the masala.
Once cooked, carefully transfer this mixture and pour it over the bowl containing the white base gravy.

Prepare Tadka

Ensure that the pan is clean and dry before adding 3 tablespoons of oil and heating it up. Once the oil is hot, add sesame seeds, curry leaves, and dried red chilli to the pan. Allow the curry leaves to crackle. After the crackling subsides, briefly lower the gas flame for 5-10 seconds and add two pinches of red chilli powder. Immediately add three tablespoons of water to the pan. Now, pour this flavourful tadka over the bowl containing the dish. Enjoy this delicious preparation paired with generously buttered bread or roti for a truly delightful meal!
