Instructions

Step 1
Preheat oven to 140 degrees fan forced and get a large clean baking tray ready, no need to grease or line with baking paper.
Step 2
Add Cashews, Almonds, Walnuts and Dates to the mixing bowl and TURBO / 0.5 SEC / 3-4 TIMES.
Step 3
Add everything else except for Cranberries and Goji Berries and MIX / REVERSE / 20 SEC / SP 3.
Step 4
Add mixture to baking tray (still without the Cranberries and Goji) and Bake for 20 minutes in total, setting a timer to stir at halfway/10 mins.
Step 5
Once finished baking, add the Cranberries and Goji berries and allow to cool completely before storing in the cupboard in airtight container.

NOTES

Step 6
This is a new and improved version of the recipe from the Lighten Up Program.
Step 7
If you want to make it go even further and share with the family, you can add some whole rolled oats (approx. 100 g) before or after roasting however this will no longer be Gluten (unless you have access to GF oats) or Grain free and will be higher in Carbohydrate. Another option is to split the total amount in half and then add the Oats to the family’s half.
