I created a healthy and very filling lasagna. This is my creation so please forgive the basic directions.

Instructions

Step 1
1. Slice zucchini longways into 1/2 inch slices. Lightly salt and set to the side. 2. Finely chop onion and garlic and sauté until soft in 2 Tablespoons of olive oil. Add bag of Gardein beefless ground and cook through until grounds are defrosted. Add oregano and 1/3 cup of marinara sauce. Cool through and then let simmer. 3. Grill zucchini in a pan or on a grill. Use cooking spray as necessary. 4. Time to layer. Layer a thin coating of marinara on the bottom of your favorite lasagna pan. Layer grilled zucchini. Spoon ricotta onto zucchini. Add a generous amount of baby spinach. Remember it will cook down as it bakes so be generous. Add half of the groundless beef mixture. Add a few spoonfuls of marinara. Add half of the mozzarella cheese. Repeat layer. 5. Bake at 375 degrees for about 45 minutes until brown and bubbly. 6. Serve with additional sauce and fresh basil and enjoy.
