2 Tbspsoy sauce

Step 1
1. Preheat the oven to 180°C/356°F. Then prepare the flax egg“ by combining ground flaxseeds and water in a small bowl .and set aside

2. Wash and drain the lentils, pour in a pot, then add the vegetable broth and let simmer covered on low heat until all water has been absorbed and lentils are soft.

3. Meanwhile, prep the vegetables by dicing the onion, carrot, mushrooms and the garlic.

4. In a pan on medium heat, sauté the onion and garlic. Then add in the mushrooms, carrots, tomato paste, soy sauce, mustard, and spices. Sauté until the mushrooms are soft and everything is mixed together.

6. In a blender or food processor, add the oats and sunflower seeds and blend.

7. Then add the sautéed vegetables, cooked lentils and the flax „egg“. Mix everything together with a spoon (don’t blend it!).

8. Transfer the mixture to a lined loaf tin. Bake the loaf for 40 minutes until it’s slightly firm and dry to touch.

9. Meanwhile, prepare the glaze by combining tomato paste, agave syrup, liquid smoke and soy sauce in a small bowl.

10. After 40 minutes, remove the loaf from the oven, spread the glaze on top and then bake for another 10 minutes.

11. When it’s done, leave to cool before serving. It’s best to let it rest in the fridge overnight because it will firm up even more.
