Instructions

Step 1
In a large bowl, mix yoghurt, lemon juice, salt, one garlic clove, ginger and lamb. Marinate in fridge overnight
Step 2
Heat the oil in a large pan, fry cumin seeds for 2 mins until spluttering. Add bay leaves and cardamom pods, fry for 2 minutes
Step 3
Add onion and remaining garlic, fry for 5 mins, Add coriander, cumin and chilli, fry for 2 mins
Step 4
Add marinated lamb and cook for 5 mins. Stirring occasionally, to prevent sticking to the base of pan
Step 5
Add tomatoes, puree and water. Simmer for 1.5 hours
