Instructions
Step 1
Cook the pasta for 10 minutes then leave to one side to cool
Step 2
Dice the chicken breast into 2inch pieces and fry in an oiled pan. Season with the basil, mixed herbs, garlic, salt and pepper
Step 3
Once cooked, remove the chicken from the pan (make sure chicken isn’t pink)
Step 4
Prep the salad base. Roughly chop the lettuce. Thinly slice the red onion.
Step 5
Mix the pasta with the mayonnaise and lemon juice. Layer it on top of the salad base
Step 6
Top with the chicken, torn prosciutto and crumbled feta cheese
