Instructions
Step 1
Roughly chop peppers and finely chop cilantro
Step 2
Combine chicken, peppers, spices, cilantro and oil in a bowl
Step 3
Sear only chicken in a pan
Step 4
Remove chicken from the pan (don’t wipe out pan)
Step 5
Add pepper mixture to same pan
Step 6
Stir to make sure veggies are cooked properly and add canned tomatoes
Step 7
Shred chicken, when cooled, and add to the pan
Step 8
Take tortillas, place on the chicken on both sides (to give the tortilla little flavor)
Step 9
In a separate pan, place flavored tortillas, add chicken mixture with cheese on top. Closed tortilla, flip on both sides to make sure they’re crispy and serve
