Instructions

Step 1
Cut the bacon and chicken into pieces.
Step 2
Bring a large pot of salted water to a boil for the pasta.
Step 3
In a large heavy bottom pot, such as a dutch oven, over medium high heat cook the bacon until crispy. Remove bacon with a slotted spoon and set aside on paper towels.
Step 4
In the same pot add the chicken. Season with salt, pepper and onion powder. Cook through then remove and set aside with the bacon.
Step 5
Meanwhile cook the pasta until al dente, reserve 1 cup of the pasta water.
Step 6
To the dutch oven add the tomatoes and seasoning with salt and pepper. Cook 3 minutes until they start to get brown. Add the cream cheese and a little pasta water and stir until the cream cheese melts and becomes saucy. Add the spinach and stir until wilted. Add back in the bacon and chicken and the pasta. Stir to combine.
Step 7
If the sauce seems too thick add the pasta water, a little at a time, to thin it out. Add more seasoning, if desired.
