Ingredients
4 servings
250gpenne pasta
1 Tbspcooking oil
100gChorizo
Sliced
400gChicken Breast
Cut into Strips
1 tspsea salt
½ tspblack pepper
3cloves garlic
crushed
1 tspsmoked paprika
1 Tbspdried parsley flakes
½ tspdried chilli flakes
2 Tbsptomato puree
200gSoft Cheese
Light
150mlPasta Water
200ml if you like a thinner sauce
100gfresh spinach
parmesan cheese
to serve
fresh basil
to serve
Instructions
Step 1
Cook Pasta in Boiling water until Al Dente (2 Minutes less than the packet states) (Save round 200ml of the Pasta Water).
Step 2
Add Oil to a Large Pan/Wok at medium-high Heat, Cook the Chicken for 7-8 minutes
Step 3
Add the Chorizo and cook for another 5-6 minutes,
Step 4
Reduce the Heat to Medium and add the Sea Salt, Black Pepper, Garlic, Smoked Paprika, Parsley Flakes, Chilli Flakes and cook until the Chicken is lightly browned.
Step 5
Add Tomato Puree and Mix In.
Step 6
Add the Soft Cheese & Pasta Water then mix together.
Step 7
Add the Penna Pasta to the Pan and combine so everything has an even coating.
Step 8
Add the spinach and cook for a further 1-2 minutes until the Spinach is wilted.
Step 9
Serve and Enjoy Topped with Parmesan Cheese & Fresh Basil
