Ingredients

1 Tbspolive oil
1onion
large, sliced
2 clovesgarlic
sliced
1 tablespoonfresh ginger
finely chopped
1 teaspooncurry powder
¾ teaspoonground cumin
½ teaspoonsalt
¼ teaspoonground cinnamon
4 cupswater
1.25 poundssweet potatoes
peeled and cut into chunks
3granny smith apples
large, peeled, cored, and cut into chunks
½ cupfresh cilantro
chopped
Instructions
Step 1
Heat the oil in a large saucepan. Add the onion and garlic and cook, stirring occasionally, for 5 minutes, or until tender.
Step 2
Add the ginger, curry powder, cumin, salt, and cinnamon. Cook, stirring constantly, for 1 minute. Add the water, sweet potatoes, and apples and bring to a boil over high heat. Reduce the heat to low, cover, and simmer, stirring often, for 20 minutes, or until the sweet potatoes are very tender.
Step 3
In a food processor or blender, puree the soup in batches until very smooth, pouring each batch into a bowl. Reheat if necessary. Stir in the cilantro.
