Add milk, salt and sugar and whisk it with eggs

Add half of the flour whisk it together

Add the rest of the flour and add water when it becomes very thick. Our goal is to achieve a watery sour cream consistency. If it's too watery you won't be able to flip it if too thick you won't be able to spread it over the pan.

Spread ghee butter over the pan thinly. Add it after each 1-2 pancakes.

Use ladle to thinly spread dough on the pan. This is tricky part. You need to pour the dough on one part of the pan and simulataniously rotate the pan to cover bottom.

Fry for 40-50 sec each side

Don't be upset if the first blin have been ruined. There is a Russian saying "the first blin is always lumpy". Which could be applied to any suitable situation btw, not exactly to cooking :)

Tip: You can smear each cooked pancake with butter a bit, to add more creamy flavor

Prepare the filing
You can use any filling you want. Most common are - boiled egg and spring onion

- fried minced meat
- cottage cheese Be creative!

Add filling to cooked blinchik and wrap
