Preheat oven to 375
Step 2
Cut vegetables into 1/4” slices and put in a large bowl. Add parsley and basil and 2 teaspoons of olive oil. Toss together and spread out in single layer in 9x13 pan. Bake 10 minutes covered with foil.
Step 3
Season fish with salt,pepper, and 2 teaspoons olive oil. Place on top of vegetables and cook another 8 minutes.
