Smoked Salmon and Egg Salad

Instructions

Step 1
Hard boil the eggs in a small pan of water for 7-8 minutes then drain and run under cold water to stop cooking. Peel and chop.
Step 2
Combine the avocado, rocket, cherry tomatoes and red onion to make a salad.
Step 3
Add the smoked salmon to your salad and drizzle over olive oil and a squeeze of lemon juice. Serve with an egg per portion and enjoy!
