Step 1
Boil beef bones in water for 5-10 minutes to get rid of impurities
Step 2
Pour out water, wash/rinse beef bones and wash pot
Step 3
Put beef bones back in pot, fill with enough water to cover meat and bring to a boil. Simmer for about an hour or longer if needed until meat is tender. no seasoning yet
Step 4
Add corn, salt, peppercorns and onions. cover and let it boil for 10 minutes
Step 5
Add 1 beef bouillion cube (3 teaspoons of beef bouillion powder) and fish sauce (about 2 black spoonfuls). taste and add more salt and/or fish sauce if necessary.
Step 6
Add potatoes, green beans, cabbage, bok choy and scallions/green onions
Step 7
Cover and bring soup to a boil. When soup is boiling, leave covered and turn the heat off. Let it sit for 5 minutes off heat before serving.
