Stacked Green chili enchiladas w/ground beef

You can purchase frozen, chopped green chilies at any spice level. Autumn-roasted, Hatch green chilies have the best flavor. Add sour cream, olives... any garnish you like. (I like to add a fried egg.)

Instructions

Step 1
Brown ground beef with all garlic.

Add chopped green chilies and 12 oz water. Let simmer.

Make masa paste with cornstarch and ⅓c cold water in small bowl. Slowly adding to beef and chili mixture, continuously stirring.

Let simmer until slightly thickened, stirring occasionally.

Place heated Tortilla on plate, spoon chili mixture onto Tortilla. Add grated cheese, onion, greens and tomatoes. Repeat.
