Instructions

Step 1
Preheat oven to 190 C (375 F, Gas mark 5)
Step 2
Place peas and sweetcorn into a bowl and place to the side. Chop carrots, red onion and peppers in small pieces. (optional to add chilli and ginger here is so chop into fine pieces)
Step 3
Season chicken with salt and pepper. (Chinese five spice optional) Cook chicken in the oven for 25-30 mins
Step 4
Add some olive oil to a pan. Add the red onion and carrots and cook for softened. Then add pepper. (Ginger and chilli) then cook for for about 5 to 8 mins then add the corn and peas.
Step 5
Once the veg and chicken has cooked. Cut the chicken breasts into strips. Plate with veggies first then add the chicken on top.
