Instructions
Step 1
turn on the Instant Pot and press the "saute" button. Heat the olive oil in the pot and saute the carrots and celery until slightly softened, about 3-4 minutes.

Add the minced garlic, dried thyme, and dried oregano to the pot, and saute for an additional 1-2 minutes until fragrant.

Add the brown lentils, farro, bay leaf, and vegetable broth to the pot, and stir to combine.

Close the lid of the Instant Pot and make sure the pressure valve is set to "sealing."
Step 5
Press the "manual" or "pressure cook" button, and set the timer for 18 minutes on high pressure.
Step 6
Once the timer goes off, allow for a natural pressure release for 10 minutes before manually releasing any remaining pressure.
Step 7
Open the lid of the Instant Pot and stir in the chopped kale. If the farro is not fully cooked, you can close the lid and cook for an additional 5-10 minutes on high pressure.
Step 8
Season the soup with salt and pepper to taste.
