It's not quite a one pot but this easy rice recipe has most of the advantages of one. The beef and Cajun seasoning make sure it's packed with flavour and there's plenty of mixed veg in there to keep everyone healthy.

Instructions
Step 1
Heat the oil in a large deep frying pan or a large saucepan over a medium-high heat and fry the onion and mince together until lightly browned, stirring regularly to break up the mince as it cooks.
Step 2
Sprinkle over the Cajun seasoning and stir through the mince and onions. Crumble over the stock cube and add 200ml/7fl oz water. Bring to a gentle simmer, cover the pan with a lid and cook 15 minutes, stirring occasionally and adding a little extra water if needed.
Step 3
While the mince is simmering, cook the rice in a large saucepan of boiling water for 10–12 minutes, or according to the pack instructions, until tender.
Step 4
Add the frozen vegetables to the mince mixture and stir through. Cook for a further 5 minutes, or until hot throughout, stirring occasionally.
Step 5
Drain the cooked rice and return to the pan. Add the mince, vegetables and spring onions and toss together well. Season to taste with salt and pepper and serve.
