Korean pancake breakfast tacos

Trader Joe’s saves me several steps when making food, especially when we travel and have limited ingredients at our disposal. I first made this recipe while we were staying at a nature reserve in Northern California. Pajeon are savory Korean pancakes made with an assortment of vegetables. They are not spicy on their own, and are so delicious. Top it with a fried cheese egg and sriracha and enjoy!

Instructions
Step 1
Heat a pan over medium heat and lightly grease with non stick spray or oil. Add 1 Korean pancake. Cook for 3-5 min per side depending on if frozen or thawed. Should be golden on both side.

In the meantime, add 1/4 of the cheese to the other side of the pan. Allow to melt then crack an egg onto the cheese. Sprinkle the eggs with some black pepper and cook until the egg whites set and the cheese is brown and crispy on bottom. 3-4 min.

Step 3
Top pancake with the fried egg and add sriracha. Repeat with remaining 3 pancakes. Enjoy!
