Instructions
Step 1
1. Combine dry ingredients (flour, corn starch, sugar, salt, baking soda) in bowl and combine well

2. Separate bowl combine water, egg, kimchi juice, and gochujang and mix well.

3. Pour wet ingredients into dry ingredients and mix about 10-15 times. Put bowl in fridge ~10 mins

4. Slice scallions thinly, cut kimchi into a medium dice

5. Remove batter and mix out any lumps
Step 6
6. Add Kimchi and scallions to batter and incorporate
Step 7
7. In a pan over medium heat add about 2T of oil
Step 8
8. Cook pancakes until nicely browned and turn. Cook both sides about 2-3 mins
