Instructions
Step 1
Place a sauce pan on medium-high heat, and then add onion, sweet potato, and garlic. Cook for 3 to 5 minutes, until the onion is soft. If the veggie stick to the pan out a bit of water.
Step 2
Add the zucchini, together with the ground cumin, ground coriander, turmeric, paprika, red pepper flakes, and hot water. Stir well. Place the lid on, lower the heat and simmer for 10 minutes.
Step 3
Remove the lid and cook for another 10 minutes, until sweet potato is cooked through and the stew has thickened.
Step 4
Serve topped with fresh cilantro.
