Chipotle BBQ Meatloaf

This recipe is used together with the Chipotle BBQ Sauce recipe.
Makes 2 loaf pans.
Don’t discard juices left at the bottom of meatloaf pans. You can make gravy out of them.

2 tsppepper
2 Tbspdijon mustard
2eggs
3 Tbspparsley
chopped
2 Tbspworcestershire sauce

Step 1
Mix bread crumbs, buttermilk (or milk), and sour cream. Let seat for a while until the bread crumbs absorb all liquids.

Mix meat and the rest of the ingredients, except the Chipotle BBQ sauce, then add soaked bread crumbs. Mix well but don’t overwork or the meatloaf will be dense.

Spray two meatloaf pans with oil, then put parchment paper slings in them.

Pack them with the meat mixture. Ensure you squeeze all air pockets out.
Step 5
Put in the 375 degrees oven for 30 minutes.

Glaze meatloaf with the sauce. The leftover sauce could be stored in a refrigerator for a few months.

Put back in the oven at 375 degrees for another 20 minutes.
Step 8
Let it sit for at least 20 minutes to prevent juices from running out while cutting.
