Mustard Glazed Meatloaf

Instructions

Step 1
Preheat the oven to 325 F.
Step 2
In a sauté pan over medium heat, melt the butter. Add the onion and sauté for about 5 minutes, or until translucent.
Step 3
Remove from the heat, stir in the garlic, and let cool to room temperature.
Step 4
In a large bowl, add the ground beef, the onion and garlic mixture, and all of the remaining meatloaf ingredients (last meatloaf ingredient is oats). Gently mix to incorporate.
Step 5
Lightly grease the bottom of loaf pan with a few drops of oil.
Step 6
Wet your hands with cold water and form the meatloaf mixture into a loaf shape to fit in the pan. Bake for 20 minutes.
Step 7
While the meatloaf is baking, combine the brown sugar, vinegar, and mustards in a small bowl.
Step 8
After the first 20 minutes of baking is over, remove the meatloaf from the oven and evenly spread NO MORE THAN HALF of the glaze over the top with a spoon.
Step 9
Bake for about 20 minutes more. Insert an instant-read thermometer into the center to make sure the meatloaf is done; it should reach at least 160 F.
Step 10
Remove from oven and let rest 5-10 minutes before slicing. Warm the remaining glaze. Turn oven to broil at 450°. After slicing, place the slices back in the pan and drizzle the remaining glaze over the slices. Place under the broiler for a minute or two.
