BBQ Chicken Salad With Satay Sauce

Sauce is good all-purpose satay sauce - can be served hot (& a little thicker) with chicken/beef kebabs or (thinner) as basis for satay stir-fry dishes.

1BBQ Chicken
Store Bought

1telegraph cucumber
cut into batons

1red capsicum
cut into batons

1sweetcorn canned

gem lettuce
roughly shredded

4spring onions
sliced diaganally

1carrot
cut into batons

bean sprouts
Satay Sauce

6birdseye chillis

1 tblspnginger
grated

1garlic clove
crushed

1brown onion
finely chopped

peanut oil

170mlcoconut milk

250 gmsmooth peanut butter

4 tblspnsoy sauce

2 tblspnrice vinegar

0.5 tspnpalm sugar
To Serve
Instructions
For the Salad
Step 1
Chop BBQ Chicken, slicing breast and thigh meat
Step 2
Mix salad ingredients together in bowl, reserving those for serving. Place in shallow serving dish & place chicken on top.
For the Satay Sauce
Step 3
Sauté chillis, ginger, garlic & onion in a little peanut oil until softened.
Step 4
Stir in coconut milk, peanut butter, soy sauce, rice vinegar and palm sugar. Mix to a smooth paste.
Step 5
Cool the sauce & add additional coconut milk if too thick.
To Serve
Step 6
Pour satay sauce over salad & chicken, serve remainder on the side.
Step 7
Sprinkle with coriander, chilli's, roasted peanuts & fried shallots.
