Instructions

Step 1
Add bacon to a large cold pot, then put onto medium heat to allow the fat to render. Fry until most of the fat has melted and the bacon pieces are starting to brown on the edges.
Step 2
Add onion, and whites of spring onions and fry until beginning to soften, about 5 minutes.
Step 3
Add garlic, and fry until aromatic, about 1 minute.
Step 4
Add butter beans, water, stock cubes, pepper and thyme. Bring to a boil on high, the reduce to low and simmer for 30 minutes with a lid on the pot.
Step 5
Add cabbage and spinach, and cook for 10 minutes or until just softened but still slighly crunchy.
Step 6
Taste for seasoning and add salt if required. Serve topped with the green parts of the spring onions
