Step 1
Set aside a paper-towel-lined plate on
the counter, or a baking tray in an an oven on warming mode (200 degrees or lower). Prep any fruit.
Step 2
Make the batter. In a medium mixing bowl, beat the egg. Whisk in baking powder. Fold in all other ingredients, except for the oil. If the batter is too thick or sticky, add a little milk.
Step 3
Fry.
Heat oil or butter in a frying pan over medium heat. Spoon batter onto pan in 1 Tbsp-sized clumps. Fry in batches until golden brown, 1-3 min. Flip and fry the other side until golden brown.
