4Chicken breasts

2bell peppers

2 Tbspcooking oil
1 packetfajita seasoning
1 tspchicken bouillon
1 tspsalt
1lemon
1 tsppaprika
1 tspgarlic powder
1 tsponion powder
1 tspchilli flakes
or cayenne pepper
1 bunchcilantro

6flour tortillas

Instructions
Step 1
Dice onions and bell peppers very small and place into large frying pan with olive oil. Make sure the pan used has a lid.
Step 2
On medium heat, mix the onions and peppers with the oil and cover. Let them simmer for 5 minutes.
Step 3
Uncover and mix the veggies, add water (1/2 cup) to the pan if they are starting to burn.
Step 4
Cover again and let them soften and caramelize.
Step 5
While cooking the onion and peppers, slice the chicken breasts really thin (about 1/4 inch slices).
Step 6
Add juice of one lemon to the sliced chicken and the fajita seasoning packet and the remaining spices listed in the ingredients. Mix well.
Step 7
Once the onions and peppers softened and caramelized, add the chicken into the pot.
Step 8
Mix the chicken with the veggies well and cover and let it cook for a few minutes. The saucepan will have a lot of liquid. Uncover and allow the liquid to evaporate mixing every few minutes.
Step 9
Once the liquid is gone, add fresh cilantro and mix it in. Remove the chicken from the pan and set aside. Use the same pan to assemble the quesadillas.
Step 10
Place the tortilla in the pan, add the chicken mis and shredded Mexican cheese (as much as your heart desires). Fold the tortilla over and cover the pan.
Step 11
After 4 minutes on medium/high heat, flip the tortilla and cover for a few more minutes until both sides are golden and crispy.
Step 12
Repeat for remaining tortilla bread and serve with a side of salsa of choice and sour cream!
