Ingredients

4sweet potatoes
scrubbed under cold running water
500gbeef mince
½ cupblack beans
drained & rinsed
1red onion
finely diced
1fresh red chilli
finely sliced
½ tspchilli powder
3 tspground cumin
½ tspdried mixed herbs
2 Tbsptomato paste
pink salt
1 tspolive oil
¼ cupvegan cheese
2tomatoes
diced
1 cupGuac

coriander
washed & roughly chopped
Instructions
Step 1
1. Preheat oven to 200°C and prepare a large tray with baking paper
Step 2
2. Brush olive oil over sweet potatoes, prick each sweet potato a few times with a fork or sharp knife and place on the baking tray. Bake in the for 55 minutes or until juices begin to ooze from the sweet potatoes piercings and a knife can easily cut through it
Step 3
3. In a large fry pan over medium-high heat, add onion and beef mince. Using a wooden spoon break up the beef mince and stir regularly
Step 4
4. Once mince is almost cooked through, add dried herbs, fresh red chilli, spices, tomato paste and black beans and stir through until beans are hot. Season with salt
Step 5
5. Remove sweet potatoes from the oven and slice open longways. Use two forks to open up the sweet potatoes slightly wider then begin loading each half with the mince mixture and a sprinkle of vegan cheese
Step 6
6. Place back into the oven until cheese has melted
Step 7
7. Remove from oven and top with diced tomato, Sunee Simple Guac and fresh coriander
