Step 1
Peel and cut the potatoes in wedges. Add to the pot, cover in water and cook until soft, then strain the water.
Step 2
Heat coconut oil in the pot, add garlic sliced, onion (diced or sliced thin), turmeric and stir everything together.
Step 3
Add coconut milk, curry leaves, pandan leaves and the chilli, stir everything together well. Finally, add the cooked potatoes.
Step 4
Dice the tomatoes and add them to the pot. Cook until it thickens (mash some of the potatoes with a fork to release starch and increase the thickness)
