I have learnt that I am a maximalist. I want it all when it comes to a pumpkin loaf and this Pumpkin Cream Cheese Streusel loaf delivers. There is a cream cheese layer and an addicting crunchy pecan streusel layer that you will literally eat out of the bowl. But if you like things more simple, you can skip one or both steps and the pumpkin loaf is still incredible on its own.

Streusel Topping

1. In a small bowl, combine flour, brown sugar, cinnamon and pecans

2. Pour the melted butter over the mixture and combine with a fork until the mixture is crumbly in texture. Set aside.

Cream Cheese Filling

1. In another small bowl, add the cream cheese and using a hand mixer, beat the cream cheese till smooth

2. Add the sugar, egg yolk, vanilla and flour to the cream cheese and blend again till smooth. Set aside.

For the pumpkin loaf

1. Preheat the oven to 350 degrees F. Line a 9x5 loaf pan with parchment paper. Allow the parchment to overhang in the pan. Set aside.

2. Add the pumpkin puree, egg, sugars, sour cream, oil and vanilla to a large bowl. Whisk till smooth and combined.

3. Add in your flour, baking powder, baking soda, salt and pumpkin pie spice to the wet ingredients and use a spatula to mix together till combined. Do not over-mix.

4. Pour half of the pumpkin mixture into the prepared loaf pan and using a spatula smooth the mixture into the pan

5. Pour the cream cheese mixture over the pumpkin mixture and smooth gently trying to keep the mixture in the centre of the pan.

6. Add the rest of the pumpkin mixture on top of the cream cheese mixture and smooth gently with a spatula. Try your best not to disturb the cheese cake layer.

7. Using your hands, sprinkle the streusel topping on top of the loaf mixture, breaking up the larger pieces with your fingers.

8. Bake for 55-65 minutes or until the top is slightly domed and the centre is set.

9. Allow the bread to cool in the pan for 20 minutes then turn out onto a wire rack to cool fully.
