This is one of my favourite on our dinner menu rotation. It ticks all the important boxes: tasty, healthy, nutritious, quick and easy to make in one pan, it can be made ahead and frozen - perfect!

Instructions

Step 1
One-pan method, which I like to use if I am in the kitchen throughout the cooking process, from start to finish.
Step 2
Two-pan method, for when I’m not around to stir things as often to prevent the quinoa from sticking to the bottom of the pan, as it likes to do.
Step 3
In the one-pan method, you add the ingredients one by one, as you go, including the quinoa.
Step 4
In the two-pan method the quinoa is cooked separately and added to the main saucepan at the end together with some coconut milk and then simmered for 15 min to bring everything together.
