In a bowl, season your chicken thighs with 1 tbsp of soy sauce, 1 tsp sesame oil, and 1 tsp of both salt and pepper.

In another bowl, season your cubed eggplant with 1 tbsp of soy sauce, 1 tsp sesame oil, 1 tbsp honey or agave, and 1 tsp of both salt and pepper.

Step 4
Mix together the remaining soy sauce, sesame oil, honey/agave, and hot sauce to create a nice sauce. Save this for later.

Step 5
Air fry your chicken and eggplant for 20 minutes. Half way through, spoon your sauce over the eggplant.
Step 6
Once cooked, let your chicken cool slightly and cut into bite size pieces.
Step 7
Serve your crispy chicken and eggplant bites over some rice. Garnish with some sesame seeds and enjoy!
