Ingredients
6 servings
3 tablespoonsolive oil
0.5yellow onion
medium, finely chopped
5cloves garlic
minced
1butternut squash
small, peeled and chopped
5 cupschicken broth
1 packageGluten-Free Penne Pasta
1 teaspoonitalian seasoning
½ teaspoonsea salt
to taste
1 packageChicken and Apple Sausage
sliced
2 teaspoonslemon zest
1 ½ cupsParmesan cheese
plus more for serving
4fresh sage leaves
thinly sliced
asparagus
Instructions
Step 1
Heat the olive oil in a large saucepan or stockpot over medium-high. Add the onion and sauté, stirring occasionally until onion begins to turn translucent, about 3-5 minutes.
Step 2
Add the garlic and chopped butternut squash and cook, stirring occasionally for 2 minutes.
Step 3
Add the chicken broth and bring to a full boil.
Step 4
Add the penne pasta, Italian seasoning and sea salt, and return to a boil. Reduce heat to a simmer and cook, stirring occasionally, for 10 minutes.
Step 5
Add the sliced sausage and greens and stir. Cook and stir until most of the liquid has evaporated, about another 2-5 minutes.
Step 6
Once much of the liquid has cooked off, add the Parmesan cheese, lemon zest and sage. Gently stir to avoid breaking the noodles. Serve with additional Parmesan cheese, and enjoy.
