Step 1
Preheat oven to 450 with rack in the lower third

Shred mozzarell
Step 3
In a medium oven proof skillet, heat 1 tbs oil and add sausage. Cook until just browned.
Step 4
Transfer sausage to a plate, then in same skillet combine marinara with 1/2 cups water. Bring to a boil, then remove skillet from heat. Stir in 1/2 teaspoon of salt and a few grinds of pepper.
Step 5
Stir tortelloni and 1 tablespoon butter into skillet with sauce. Add sausage and cover skillet tightly with foil. Bake on upper rack until pasta is tender and sauce is slightly thickened, about 15 minutes.
Step 6
Remove skillet from oven, discard foil. Switch oven to broil, then top with mozzarella. Broil on upper rack until cheese is melted and browned in spots, 4-5 minutes. Remove from oven and let sit for 5 minutes before serving.
