Ingredients
6 servings
1 tablespoonolive oil
3Italian turkey sausages
casings removed
2garlic cloves
thinly sliced
24 ouncesmarinara sauce

4 ouncesmascarpone
or cream cheese, cubed and softened
4 ouncesbaby spinach
20 ouncesfresh tortellini

3 ouncespart-skim mozzarella
shredded
black pepper

Instructions
Step 1
Preheat oven to 350˚F.
Step 2
Place a large skillet over medium heat.
Step 3
Add oil and sausage and brown, breaking up into bite sized pieces with a wooden spoon, 3 to 4 minutes.
Step 4
Add garlic and sauté for 1 minute.
Step 5
Pour marinara into skillet and stir in mascarpone (or cream cheese). Continue to stir until mascarpone has melted and the mixture is smooth and creamy. Season with pepper and bring to a simmer.
Step 6
Add spinach in handfuls, stirring after each addition, until all spinach has been added and wilted into sauce.
Step 7
Add tortellini and fold into sauce until fully combined and evenly coated.
Step 8
Top tortellini mixture with shredded mozzarella and bake for 16 to 18 minutes or until cheese on top has melted, tortellini has cooked through and mixture is bubbling (place under broiler for 1 minute to brown, optional).
Step 9
Remove from heat and cool for a few minutes before topping with basil leaves and serving.
