Ingredients

200gwholemeal couscous
salt
1 Tbspoil
water
boiling
1 Tbspoil
2 clovesgarlic
1 thumb sizedginger
piece
4scallions
1Yellow Pepper
1red pepper
1 headbroccoli
Florets of
1red chilli
1courgette
1 x 400mlcoconut milk
3 Tbspalmond butter
2 Tbsptamari
1 Tbspmaple syrup
150mlwater
2 Tbspcurry powder
sugar snap peas
Coriander
chilli flakes
Instructions
Step 1
Chop all the veg and boil some water.
Step 2
Heat the oil and add garlic and ginger. Fry for two minutes.
Step 3
Add the rest of the veg and fry for another 3 minutes.
Step 4
Add the sauce ingredients. Bring to a boil then simmer for 5 minutes.
Step 5
Mix couscous with oil and salt. Cover with boiling water and leave for 5 minutes.
Step 6
Garnish with coriander and chilli flakes.
