Step 1
To make the crepes. Beat the eggs and beat in milk,water and salt. Add the flour 1 tbs at a time, ending well after each addition. Stop when the batters acquired the consistency of heavy cream. Pour through a sieve. Let stand for 30 minutes.
Step 2
When the resting period is over add a tbs of cool melted butter. Heat a crepe pan and add a little melted butter. Quickly swirl enough batter around to coat the bottom of the pan. Pour excess batter back into the pitcher.
Step 3
Cool on one side until the sides curl up and the bottom is dry. Turn onto a plate cooked side up cover with a towel.
Step 4
To make the filling. Mix all the ingredients together and blend until smooth.
Step 5
Coat the bottom of a lasagna pan with butter. Now fill the crepes and place seam side down in the pan. Brush the tops of the blintezs with butter.
Step 6
Pre heat an oven to 400. Cook for 20-30 minutes when the blintzes turn golden brown and puffy.
Step 7
To make the sauce. Add blueberries, lemon juand sugar to a pot and bring to a boil over medium heat. Let bubble away for 3 minutes until the berries give off copious amounts of juice. Let cool slightly.
Step 8
To serve dust with powdered sugar and cinnamon. Put out the sauce and sour cream.
