Instructions

Step 1
Blend peeled ginger, carlic, turmeric, chopped cilantro and onion and sliced chilies in a blender with 3-4 tbs of rapeseed oil
Step 2
Add curry powder and stock powder and blend some more
Step 3
Slowly cook the paste on a large pan, for 5 to 10 minutes, low heat. Add oil if it dries up.
Step 4
Add the hot water, mix, then add only the cream of coconut first. Mix well.
Step 5
Once the cream of coconut has blended in smoothly, add the milk of coconut.
Step 6
Let simmer, and if it needs thickening, use 1tbs of corn flour (mix first in a small dish with cold water). Add wanted protein/fried aubergine/roasted sweet potato or pumpkin, heat up and serve with basmati rice.
