Pork Tenderloin with Bourbon Peach Sauce

Ingredients

3 tablespoonsolive oil
divided
1 poundpork tenderloin
trimmed
1 teaspoonkosher salt
divided
1 teaspoonblack pepper
divided
2 cupsfresh peaches
sliced, peeled
2 tablespoonsbourbon
3 tablespoonsapple cider vinegar
divided
2 tablespoonshoney
divided
1 tablespoonunsalted butter
1 tablespoondijon mustard
3 cupsgreen cabbage
shredded
½ cuptoasted sliced almonds
¼ cupfresh flat leaf parsley
chopped
2 teaspoonsfresh thyme
finely chopped
Instructions
Step 1
1. Heat large cast iron skillet over medium high and add one tablespoon oil
Step 2
2. Season pork with half teaspoon salt and half teaspoon pepper. Add to skillet and cook, Browning on all sides for five to six minutes per side. Transfer to a plate
Step 3
3. Add Peaches to skillet, cook, stirring often until lightly browned, two to three minutes
Step 4
4. Add bourbon, one tablespoon vinegar and one tablespoon honey. Cook, stirring often until sauce is slightly thickened, about 5 minutes
Step 5
5. Remove skillet from heat, add butter, swirling until melted
Step 6
6. Whisk together mustard, remaining two tablespoons oil, remaining 2 tablespoons vinegar, remaining one tablespoon honey, remaining 1/2 teaspoon of salt and remaining 1/2 teaspoon pepper in a large bowl. Add cabbage, almonds, parsley and thyme and toss to coat

7. Slice pork. Divide slaw and pork among four plates and top with Peach sauce
