Speedy Harissa & Tomato Chicken With Couscous
"This easy, speedy chicken's full of spicy harissa paste, fresh tomatoes, juicy chicken breast and green beans. Serve in 20 minutes with fluffy couscous and a dollop of yoghurt. Get in!"

Instructions
Step 1
Boil a kettle.
Chop the chicken breast[s] into small, bite-sized pieces
Step 2
Chop the green beans in half and roughly chop the cherry tomatoes
Step 3
Heat a large, wide-based pan (preferably non-stick with a matching lid), with a drizzle of olive oil over a medium-high heat
Step 4
Once hot, add the chopped chicken and green beans and cook for 3-4 min or until the chicken has browned all over
Step 5
Whilst the chicken is browning, add the couscous to a heatproof bowl
Step 6
Crumble in half [1] Knorr chicken stock cube and add 200ml [400ml] boiled water, cover and set aside
Step 7
Dissolve the remaining Knorr chicken stock cube in 100ml [175ml] boiled water
Step 8
Stir in the tomato paste and harissa paste – this is your harissa stock
Step 9
Once the chicken is browned, add the cherry tomatoes and harissa stock to the pan
Step 10
Cook, covered, for 5-7 min or until the chicken is cooked through (no pink meat!) the sauce has thickened and the tomatoes are starting to break down
Step 11
Season with a generous grind of black pepper – this is your harissa & tomato chicken
Step 12
Fluff the couscous with a fork
Step 13
Serve the harissa & tomato chicken with the couscous to the side.
Dollop with the natural yoghurt and sprinkle over the pumpkin seeds
