BLT Salad with Creamy Wasabi Dressing and Ciabatta Croutons
BLT SALAD with bacon fat croutons and creamy wasabi dressing. THIS is RESTAURANT QUALITY and so easy to make. You can prep the ingredients ahead of time and make the dressing the day before.

Ingredients
4 servings
1.5 lbbacon
up to you
1 loafciabatta
or sourdough ripped or cut into small pieces
2 cupsshredded brussels sprouts
2 cupsromaine
thinly sliced
2beefsteak tomatoes
diced
1 bunchdill
finely chopped
1 bunchscallions
sliced on a bias
1 bunchparsley
finely chopped
0.5red onion
thinly sliced into half rings
2avocados
sliced, 1/2 avocado per salad
For the dressing:
Instructions
Step 1
Preheat the oven to 400 degrees F. Line the bacon on a sheet pan. Bake for 15-20 minutes until crispy. Carefully pour the fat into a bowl.
Step 2
While that bakes, whisk together the ingredients for the wasabi dressing. Taste and adjust seasoning to your preference.
Step 3
Pour some fat onto the bread pieces and toss until combined. I would use about 2 tbsp here, but feel free to use more. You don’t want the bread soggy. Broil on high for 2-3 minutes until crisp. Remove from the oven.
Step 4
Combine the Brussels sprouts, romaine, dill, scallions, parsley, tomatoes and red onion in a bowl. Crumble the bacon into bite sized pieces and add to the salad.
Step 5
Add the dressing and toss. Plate and top with an avocado on top along with the croutons. Enjoy!
