This is a basic biryani recipe from Shan's Byrani packet

Step 1
Heat the oil and add the onion for 10 minutes until soft and transparent. Add the garlic a bit layer to prevent it burning
Step 2
Add the chicken or your meat of choice and just colour the outside before adding your biryani powder which is dissolved in half a cup of water followed by the yogurt
Step 3
Leave to simmer for 20 minutes until the meat is cooked. Then add your tomatoes until the gravy begins to split (if you are cooking lamb, cook for longer, and also add more water to prevent it drying)
Step 4
Wash your rice well and add 3/4 the amount of water you'd normally add, so normally with 3.5 cups, you'd use 7 cups water, but in this case we'll use 5.75 cups. We only want to cook the rice 75%. also season the water with salt
Step 5
Once the rice is 75% cooked, layer half in a big pot, followed by the curry, followed by the rest of the rice and then mint and corriander
Step 6
Leave to cook for 10 minutes until the rice is fully cooked and then completely mix together evenly
Step 7
Let the dish rest for 5 minutes with the lid off to prevent the rice being sticky. Great for dinner parties as a big sharing dish
