Instructions
Step 1
Chop the greens, blanch them in boiling water and strain excess liquid from them. Discard the liquid. This reduces some of the oxalates in the greens.
Step 2
Put the water in your soup pot along with the blanched green and tomato. Simmer over medium heat for 5 minutes.
Step 3
Add the ground peanuts and salt. You can add 1/2 teaspoon of baking soda. Legumes cook more quickly in an alkaline environment.
Step 4
Simmer over low-medium heat for another 15 minutes or until the peanuts are not hard.
Step 5
Serve with hot sauce of your choice.
