Ingredients.

800g potatoes, cubed
1tbs garlic granules
1tbs oregano
4tbs pesto, red or green
1tsp salt
500g 5% beef mince
150g diced smoked bacon
1 onion, finely diced
2 medium carrots, finely diced
2 peppers, sliced or diced
2 cloves garlic, finely grated
1tbs tomato purée
1tbs Italian mixed herbs
1 beef stock cube
500g passata
60g extra mature cheddar, grated
60g mozzarella, grated
Salt and pepper to taste.

Method.

Fry off the onions, carrots and peppers until soft then add the garlic. Add your bacon and cook for a few minutes, then add the beef mince and cook until brown. Add the tomato purée, stock cube, herbs and passata and cook on a low heat for at least 30 min (longer the better). Meanwhile Mix the cubed potatoes with the seasonings and pesto and pop them in the air fryer/oven for 15-20 minutes on 220°C fan/200° air fryer. Top the bolognese with the cooked potatoes and sprinkle with cheese, pop under the grill or in the oven until golden and bubbling. Serve and enjoy.
