Instructions
Step 1
Heat large deep pan on med high with olive oil, add chicken and cook on each side 3-5 mins until brown
Step 2
Add in all other ingredients and let cook for 20 minutes, keep an eye to ensure the chicken remains covered in liquid, add more water or chicken/vegtable stock if needed
Step 3
Remove chicken and shred
Step 4
Place shredded chicken back into pot and let cook on med low for 20 mins
Step 5
I turned mine down to low for an additional 20 mins
Step 6
Use rice or lettuce as a base
Step 7
Add your toppings: green onions, tomatoes, shredded vegan cheese (or regular cheese if you can tolerate!)
