Instructions
Preheat oven to 425F
Step 1
Pour 1/4T olive oil into baking dish; swirl to coat bottom of dish; place chicken in baking dish.

Spoon pesto over chicken & scatter tomatoes around; drizzle remaining olive oil over top.

Bake 30 min. After chicken is cooked through, sprinkle cheese over top. Return baking dish to oven & bake (5 min. longer), until cheese is melted.

Melt butter over med. in 8” skillet; add minced garlic & cook, stirring (1 min.) Stir in lemon juice & parsley; cook (1 min.) Pour sauce over chicken & enjoy hot.

SALT: You may find your chicken needs a bit more salt. If so, add a pinch more. Many brands of mozzarella cheese and jarred pesto contain different amounts of salt. For best results, taste and add more if needed.
