Instructions

Preheat oven to 425F

Step 1
Pour 1/4T olive oil into baking dish; swirl to coat bottom of dish; place chicken in baking dish.

Spoon pesto over chicken & scatter tomatoes around; drizzle remaining olive oil over top.

Bake 30 min. After chicken is cooked through, sprinkle cheese over top. Return baking dish to oven & bake (5 min. longer), until cheese is melted.

Lemon-Garlic Sauce

Step 4
Melt butter over med. in 8” skillet; add minced garlic & cook, stirring (1 min.) Stir in lemon juice & parsley; cook (1 min.) Pour sauce over chicken & enjoy hot.

SALT: You may find your chicken needs a bit more salt. If so, add a pinch more. Many brands of mozzarella cheese and jarred pesto contain different amounts of salt. For best results, taste and add more if needed.

PESTO: To keep this recipe super simple, you might want to purchase a small jar of pesto from the grocery. If you choose to make homemade pesto and use it with this chicken recipe, store the rest in a covered container in the refrigerator. Consider using the pesto in breakfast recipes, in a dip, mixed with pasta, or on pizza. Homemade pesto will keep for a week if covered in the refrigerator.
