This is a great and simple crockpot chicken recipe that can be eaten many ways. Southwest chicken can be served over a bed of greens, in a tortilla, over tortilla chips or eaten alone! Suggested toppings include: avocado, black beans, fresh cilantro, plain yogurt, or black olives. When calculating nutritional content, be sure to include added sides and check labels.
